• Slice and stir-fry with egg, salted black beans or minced meat
• Soak sliced gourd in salted water briefly to mellow the bitterness
• Add to soups such as bitter gourd and pork rib soup
• Keep refrigerated in a perforated bag and use within a few days for the freshest texture
