GF Organic Eggplant (Brinjal) is sold per kg and is a purple-skinned eggplant with tender flesh, suited to grilling, frying or braising in a range of dishes. The flesh turns soft and slightly creamy once cooked through, absorbing the flavours of whatever sauce or spice it is paired with.

• Slice and grill or roast until soft for a smoky flavour
• Cube into curries, stews or stir-fries
• Salt slices briefly before cooking to draw out excess moisture
• Keep the eggplant refrigerated in a bag and use within a few days.
