Step 1 of 3
Make the filling: Mix well greek yogurt, honey and vanilla extract in a bowl.
Step 2 of 3
Soak the rice cakes: In another bowl, mix Illy instant coffee and hot water together. Soak 1 piece of rice cake in the coffee for a few seconds (until the whole rice cake turns equally brown).
Step 3 of 3
To assemble: Place the soaked rice cake at the bottom of a bowl. Spread the greek yogurt filling over the rice cake. Repeat in the same order. Dust with cocoa powder.

1) 1 cup Greek Yoghurt
2) 4 tbsp honey, or more if desired
3) 1/4 tsp vanilla extract
4) 3-4 Rice Cakes
5) 1tbsp Illy instant coffee
6) 50-100ml boiling water
7) Cocoa powder, as needed
