Method

Step 1 of 9

In a large pot over medium-high heat, bring oil to 190°C.

Step 2 of 9

Peel and cut onions crosswise into ½ inch slices.

Step 3 of 9

Separate into rings and place into a large bowl with iced water.

Step 4 of 9

In a medium mixing bowl, whisk 125g of flour, salt, white pepper, and baking powder.

Step 5 of 9

Whisk in the beer and 2 tbsp of ice water until combined.

Step 6 of 9

In a separate bowl, add the remaining 125g of flour.

Step 7 of 9

Remove onion rings from ice water and pat dry.

Step 8 of 9

Coat rings in flour, then in batter – allow excess to drip off.

Step 9 of 9

In batches, deep fry battered rings for 10 minutes or until golden brown.

Ingredients

1) 2 White Onions

2) 1.4L Ice Water

3) 250g All-Purpose Flour, divided in half

4) ¼ tsp White Pepper

5) ¼ tsp Garlic Powder

6) ⅛ tsp Cayenne Pepper

7) ½ tsp Baking Powder

8) 240ml White Rabbit White Ale (or any pale ale beers)

9) Oil, for frying

10) 1 tub Chris Tzatziki Dip
